Ingredients:
- Hot Monkey Pepper Infused Vodka (distilled and bottled in Portland OR)
- Organic, 100% pure pineapple juice
- Extra Ginger Beer
- Squeeze of lime
- Collins glass (10-12 fluid oz)
Preparation:
- Fill Collins glass with ice
- Add 1 1/2 oz Hot Monkey vodka
- Fill remaining 1/2 of glass with organic, 100 % pineapple juice
- Add a squeeze of lime
- Pour contents into a shaker tin, and shake until frosted
- Pour ingredients into Collins glass
- Fill glass with Extra Ginger Beer
- Garnish with sliced jalapeno peppers and lime wheel
I LOVE the Hot Monkey Vodka. It is made locally (in Portland) by a company that uses organic ingredients. I made a similar version, but without the ginger beer. I served mine straight up in a martini glass and garnished it with a dried hot pepper. It tastes great, but more than one is bound to give you a tummy ache. I'll bet the ginger beer version is not as hard on the tummy since ginger helps settle your stomach.
